A little later than usual, but blessed with beautiful early autumn weather, we held this year’s summer event – this time at the Hinterhof Metzgerei in Rheineck.
The evening was all about enjoyment, sustainability, and quality time together as a team.
Culinary delights with a special philosophy
The Hinterhof Metzgerei follows an extraordinary philosophy: more quality of life for the animals also means more quality on the plate. Instead of industrial farming, the focus is on natural feeding, ample outdoor time in the herd, and conditions that allow the animals to live out their natural instincts. The result: meat specialties with a truly distinctive character and flavor.
We were particularly impressed by the idea of refining the meat of older cows – a tradition long appreciated as a delicacy in countries like Spain, and one that is now being passionately brought to life here in Switzerland.
Five courses of indulgence – with a wine journey
At a long tavolata we were treated to a five-course menu, carefully prepared by Michael Vogt and his team. Each dish was a small composition of its own – paired with a wine journey that combined regional and Italian selections in surprising ways. One highlight: instead of red wine, a perfectly matched white wine was served with the dry-aged beef, which elevated the flavor of the meat even more.
Around the table
Serving the courses together turned into a small teambuilding moment: passing plates, helping each other arrange dishes, and sharing a laugh when things didn’t work out perfectly right away. The relaxed atmosphere and the tavolata made it easy for conversation and enjoyment to flow seamlessly together.

The event in Rheineck was a special experience – and a welcome opportunity to pause and enjoy time together.
